Black Beans & Rice Salad

Ingredients: * Beans, black, 432 grams (15.25 oz can) * White Rice, long grain, 2 cup * Iceberg Lettuce, 3 cup, (shredded) * Tomato (plum), 1 tomato * Raw White Onion, 1 medium (chopped) * Carrot, 1 raw (7-8" long, shredded) * Dried Oregano, 1 tbsp * Garlic Powder, 1 tsp * Salt, 1 tsp
PREPARATION - - - - - - -
Peel carrot and onion.
Chop onion and tomato into small dice.
Shred carrot and lettuce.
COOKING - - - - - - - -
Put beans, seasonings, and 2 cups of water in saucepan, cover and bring to boil or medium-high heat.
Add rice, stir, and cover, reducing heat to low.
Allow mixture to cook for 20 minutes, stirring periodically to prevent buring or sticking.
After 20 minutes, check rice to ensure it's cooked - may need to add as much as another 1/2 cup of water and cook for an extra 5 minutes.
SERVING - - - - - - -
Place shredded lettuce in bottoms of 2 bowls.
Cover lettuce with equal portions of the beans and rice.
Put carrots, onions and tomatoes over beans and rice.
This makes 2 servings.
Optionally, sprinkling the liberally with Tabasco sauce adds both heat and a touch of vinegar tartness.
