Stuffed Baked Potatoes 1

Ingredients
4 medium potatoes1/2 cup 1% cottage cheese1/4 cup fat free milk2 tbsp Smart Balance light spread1/4 tsp tabasco sauce1 Tbsp scallion1/4 cup grated parmesan cheesesalt, pepper, onion powder, garlic powder
Directions
Clean potato skin and microwave until cooked through. When cool enough to touch, cut each potato in half, scoop out pulp and set aside. In separate bowl combine pulp, cottage cheese, smart balance, milk, tabasco, scallion and spices. Mix with electric hand mixer or KitchenAid to make fluffy. Scoop back into potato shells, sprinkle with Parmesan cheese and bake at 350 for 15-20 min.

Half a potato is 1 serving.
