RR Taco Pasta Toss

1 pound penne pasta whole grain1 tbsp EVOO1 lb lean beef1 large onion chopped1 large jalapeno, halved, seeded4 cloves of garlic, pressed2 tbsp chili powder1.5 tsp cumin1 tbsp coriander1/4 c tomato paste1.5 c chicken broth2 c Mexican style cheese2 small plum tomatoes, chopped1/4 head iceberg lettuce chopped
Serves 4
Boil pasta until al dente. Drain and return to pot.
In large skillet heat EVOO, add beef and cook until browned. add 3/4 of onion, jalapeno, garlic, and spices. cook until onion is softened, stir in tomato paste, then stir in broth.
Add sauce to pasta and toss. Spoon onto plate and top with cheese.
Use additional onion, tomatoes and lettuce as toppings.
