chicken stir fry low fat

Ingredients
12 oz chicken breast, cubed1 bag bean sprouts1 c sugar snap peas1 pkg baby corn2 c cooked brown rice1 c red pepper1c carrots3T low sodium soy sauce1 c onion1/2 t ground ginger
Directions
sprinkle chicken with pepper and ginger. Saute in nonstick spray just till no longer pink. add in all veggies (match stick chopped) soy, and 3/4 c stock. cover and cook at medium high heat for 10-15 minutes, stirring occasionally. Mix remaining stock and cornstarch and add in to mixture. Cook till thickened and serve over brown rice.
