Quick Peanut Sauce

Ingredients
1/2 c. natural peanut butter1 tbsp soy sauce1 tbsp roasted sesame oil1 tbsp rice wine vinegar1 tbsp brown sugar1/4 c. to 1/2 c. hot water1 tsp Vietnamese chili-garlic sauce (tuong ot) - optional
Directions
Mix together all ingredients except water using a small food processor or immersion blender. Add hot water to loosen to desired consistency. Once the peanut sauce has come together, mix in the chili-garlic sauce to taste. (If you do not like hot food, you can omit this.)

Makes 12 heaping tablespoon servings.
