Savory Apples and Onions

4 granny smith apples, peeled, cored, cut into thick chunks4 medium white onions, sliced2 springs of fresh thyme2 bay leaves2 tbsp olive oil, divided1 tbsp butter
In a pan over medium-high heat, sautee the apples in 1 tbsp of olive oil, along with one sprig of fresh thyme and one bay leaf. Cook about 10 minutes. The apples should get golden brown, NOT MUSHY. Remove the thyme stalk and bay leaf, and set aside.
In another pan, combine 1 tbsp olive oil and 1 tbsp butter over medium-high heat. Add the other sprig of thyme and bay leaf, and the onions. Sprinkle lightly with salt and pepper to taste. Sautee until the onions are carmelized to golden brown, almost melting, about 20 minutes. Remove the thyme stalk and bay leaf.
Add the cooked apples to the pan with the cooked onions, stir to combine, and serve hot.
1/2 cup servings work well, but the number of servings depends entirely on the sizes of the apples and the onions!
