Ingredients
1 cup - short grain sushi rice *(I buy this from a local japanese restaurant)*1 sheet - Nori (seaweed wrap)1-2 tbsp cream cheese (cut into 'stick' form).5 jalapeno pepper (cut into long thin slices)1 cucumber stick (long thin 'stick', 1/3" thick)2 shrimp tempura *(I buy boxes at Costco that just need to be heated - no mess)* Here is a link to the manufacturer: https://www.rtfoods.com/tiger-thai/index.php?page=tiger-thai
Directions
Some sushi rolling technique is required. A mat is recommended, these can sometimes be found at barnes & noble stores in a sushi kit.

1. Follow directions to cook your tempura (if frying add add'l calories, I bake mine) OR subsitute any sashimi-grade seafood of your choice & prepare.

2. On a seran wrapped sushi mat, lay the nori on the very edge. Keeping your fingertips wet, pat rice onto nori in a single layer. Line ingredients side-by-side about 1" away from the edge. (Be sure to leave the shrimp tails on the outsides of the roll.) Begin to roll at the edge, tucking as you go until the roll is well formed. Cut into 6-8 pieces with a very sharp (wet!) knife.

*Serve with soy sauce & wasabi (optional but recommended).

1 serving = 1 roll before cutting.
