Easy Chile rellenos casserole

Ingredients
8 oz chopped green chiles ( 2 cans with liquid)12 oz shredded Mexicam cheese blend1 cup egg beaters1/4 cup pancake mix1/2 tsp each salt and pepper Pam spray8 inch round casseroleOptional:salsa or enchilada sauce served on side
Directions
Pre- heat oven to 350 degrees
Makes 4 servings
1. Spray pam in casserole dish.
2. Mix egg beaters, salt and pepper until fluffy
3.Mix in pancake mix until well blended but do not overmix
4. Fold in chiles
5. Fold in cheese
Pour into casserole
Bake approx 20 -30 minutes until golden brown, puffy and knife comes out clean.
Serve hot or at room temp with salsa or enchilada suace on side
