Unstuffed Bell Peppers Casserole

Ingredients
2 cups uncooked brown rice1.5 pounds lean ground beef (can substitute ground turkey)1/2 tsp salt1/2 tsp pepper1 cup chopped onion1 cup chopped bell pepper1.5 15-oz cans tomato saucestrips/squares of bell pepper to line dish4 slices mozzarella cheese
Directions
Cook rice according to package directions, omitting any salt and/or butter. In skillet, brown ground beef with onion and chopped bell pepper, adding salt and pepper.
When rice is done, add beef mixture and tomato sauce and mix well. Line bottom of 2.5 quart casserole dish with bell pepper strips/squares. Pour rice mixture on top. Lay cheese over the top.
Bake at 350 for 20-30 minutes, long enough for the cheese to bubble and begin to brown.

    This was lacking something... spices, maybe. I think if you substitute the tomato sauce w/ a jar of already seasoned Ragu this recipe would be just perfect!! Otherwise, it was really good!! I added a bit of garlic powder. I will DEFINITELY try it again w/ seasoned sauce. The prep wasn't so bad! - 9/18/08

    Really good! I added some diced tomatoes and garlic. I like things spicy so I also added cayenne, red pepper flakes and hot pepper sauce - made it perfect for my tastes! - 2/27/10

    I will be making this tonight for dinner using 1 can of black beans and 1 can of corn drained instead of the rice and shredded cheese instead of cheese slices. The leftovers are great wrapped up in a tortilla. Yum! - 8/3/12

    This was great. I used ground turkey instead of the beef. I also added a little cumin and garlic when cooking the meat/onions/peppers. Subbed the mozzerella cheese for pepper jack cheese. - 1/30/10

    Great recipe! I love stuffed peppers, but husband isn't crazy about them at all. He actually likes this!!! Said I can have it any time I want. I halved the recipe as saw it was for 8 and only 2 of us....more than enough. Could have leftovers for lunch!! Thanks for a great recipe. - 10/28/07
