Sweet potato latkes

Ingredients
About a pound of sweet potato--I used two large ones.1 sweet white onion3 eggsa small handful of whole wheat floura little bit of cumin!3 tablespoons canola oil
Directions
Peel sweet potatoes and onion and either grate by hand or blend in a food processor. Pour out extra liquid--not all of it, but the excess.

Add 3 eggs and the flour, and mush it all around til it's all blended together. (I use my hands!)

Pre-heat the oven to 350F. Pour the oil on a non-stick cookie sheet. You want enough oil to make the edges crispy, not just to keep it from sticking.

Take about 1/3 cup of potato mixture (basically a handful) and form into a ball in your hands. Flatten and place on cookie sheet. It should form a circle of about 4" diameter. You can place them close together since they won't rise, but be sure and tuck in stray potato pieces so it all sticks together.

Bake for 15 minutes, flip, and bake for 15 more. Latkes should be golden brown and crispy on the edges. Enjoy plain, with unsweetened applesauce or plain nonfat yogurt, or both!

Makes about 6 4"-diameter latkes.

    I made my Levivot/Latkes smaller in size and I got 12, which means less calories per serving! :) Also, I added some salt, Cinnamon and Garam Masala to spice things up a little more, and I had to increase the time in the oven for extra crispness. - 12/19/14
