Quinoa, Broccoli & Cheese Casserole

Ingredients
1.5 cups of dry red quinoa1/2 medium onion - chopped2 cups broccoli florets cut into bite-size pieces1 cup shredded cheddar (divided into 3/4 cup and 1/4 cup portions)1/4 cup grated parmesan1 clove crushed garlic1/2 tsp paprikasalt & pepper to taste.
Directions
cook quinoa with 3 cup water.
saute onion
cook broccoli in microwave for about 2 minutes
combine veggies and spices in mixing bowl, then add quinoa, parmesan and 3/4 of cheddar.
Mix well
press into 8x8 baking dish, sprayed with cooking spray.
sprinkle with remaining cheese
bake uncovered for 15-20 minutes until cheese on top is melted.
