Faux Potato Salad

Ingredients
3 cups steamed cauliflower3 hard boiled egg whites, chopped1/2 cup Fat Free Miracle Whip1/4 cup chopped onion1/4 cup sweet pickle relish1 tsp yellow mustard
Directions
Steam cauliflower and allow to cool. I simply bought a bag of frozen cauliflower, measured out three cups, and placed in a Ziploc Steamer Bag. Microwaved the bag on high for 4.5 minutes. Then I placed the bag in the fridge to cool.

Hard boil eggs and allow to cool. Peel eggs, remove yolks, and chop into small pieces.

Stir all ingredients together in a medium mixing bowl.

Refrigerate until chilled.
