Steel Cut Oats

Ingredients
1 c steel cut oats3 c boiling water3 sec non-stick spray1 c 2% milk
Directions
heat non stick spray in a heavy-bottomed saucepan over medium heat. Add oats to spray and stir for 2 minutes, until lightly toasted.

Step 2Carefully add 3 cups boiling water to oats in saucepan. Stir and reduce heat to simmer. Simmer gently for 25 minutes, stirring once or twice.

Step 3Stir 1 cup milk into oatmeal. Continue to cook for another 8 to 10 minutes, or until most of the milk has been absorbed. Stir once or twice during this time to make sure oatmeal is not sticking to the bottom of the pot.

Step 4Remove oatmeal from heat. Cover and let stand for 2 minutes.

Step 5Leftovers will keep in the fridge for up to three days. To reheat, stir in a little milk and heat on high in the microwave for 1 to 2 minutes, stirring midway through.
