Limey Corn Salad

Ingredients
2 cups fresh or frozen corn1 avocado, diced2 pints cherry tomatoes, halved1 bunch green onions, choppedDressing:2 T. olive oil1 t. grated lime zest (or less if you like)2 T. fresh lime juice (or less if you like)1/4 c. chopped cilantro1/2 t. salt1/2 t. pepper
Directions
Combine corn, avocado, tomatoes and onions in large bowl. Mix together the dressing ingredients in a small bowl and pour over salad, toss to mix. Let stand at least 30 min for flavors to marry. Makes about 6 nice size servings.
