Ingredients
1/2 pound Campari tomatoes, halved and quartered1 large cucumber, peeled and chopped2/3 cup fresh lemon juice1/2tbsp olive oil1 large clove garlic, crushed or finely mincedgenerous pinch kosher salt (maybe 1/8tsp total)1/4 tsp fresh ground black pepper*salt and pepper to personal taste, measurements for nutrition info*
Directions
Makes 2 generous servings

Place chopped tomato and cucumber in bowl

Whisk together lemon juice, olive oil, garlic, salt and pepper, then pour over veggies. Serve on a bed of lettuce or by itself.
