Cherry Almond Oatmeal Cookies (Serving = 1 Cookie)

1/2 c butter, unsalted1/2 c shortening1 c brown sugar (firmly packed)1/2 c sugar2 eggs1.5 tsp almond extract1/2 tsp salt1 c all-purpose flour1/2 c whole wheat flour1 tsp baking soda2 c dried cherries1/2 c triple sec, cherry rum, or hot water1/2 c finely chopped almonds3 c old fashioned oats
Makes six dozen cookies. 1 serving = 1 cookie
Preheat oven to 325 degrees F.
In a small bowl, soak dried cherries in the triple sec, cherry rum, or hot water. Set aside
Beat butter and shortening until fluffy.
Add brown sugar and granulated sugar. Beat until blended.
Add eggs and beat until well blended.
Add almond extract and mix well.
In separate bowl, combine flours, salt, and baking soda.
Add to butter/sugar mixture and blend well.
Fold in oats and almonds.
Thoroughly drain cherries
Fold cherries into cookie dough.
Place rounded teaspoons of dough onto ungreased cookie sheets.
Bake for 10-11 minutes until tops are golden.
Remove from oven and cool on cookie sheet for 1 minute before removing to cool completely on a cooling rack.
