Ingredients1 large egg1/4 cup egg substitute1/4 cup plain soy milk1/2 cup asparagus spears cut into bite-size pieces1/4 teaspoon kosher saltpinch ground black pepper

Instructions
Beat egg and egg substitute and milk with salt and pepper in microwaveable bowl. Stir in asparagus and microwave on high for 2-3 minutes or until eggs set. Run a fork around the edge of the bowl to release the frittata. (Soak the bowl immediately to facilitate cleanup).
