Spinach & Feta Crustless Quiche

Ingredients
2 large eggs1/4 cup EggBeaters3 oz. low fat feta cheese1 cup light buttermilk10 ounce package frozen spinach, thawed1 Tbsp butter1/2 cup diced onion1/2 cup sliced mushrooms1/2 tbsp Italian seasoningsalt & pepper1/2 tsp nutmeg1/8 tsp cayenne pepper
Directions
Saute onions until brown. Remove from pan. Saute mushrooms until browned. Remove from pan. Squeeze excess moisture out of thawed spinach. Grease a 10 inch pie plate. Layer onions, spinach, mushrooms, feta and seasonings. Whisk eggs, egg beaters, and buttermlik as well as 1/2 tsp nutmeg and 1/8 tsp cayenne pepper. Pour over veggies and feta. Bake at 325 for 35 - 55 minutes until lightly browned and puffed.
