1 spray cooking spray1 lb uncooked boneless, skinless chicken breast, 4 4oz pieces1/2 tsp table salt1/4 tsp black pepper, freshly ground1 tsp olive oil1 Tbsp fresh thyme, or 1 tsp dried2 tsp spice islands no salt lemon herb seasoing, or similar product
Preheat oven to 400 degrees. Coat a shallow roasting pan with cooking spray. Season both sides of chicken with salt and pepper. Transfer chicken to prepared pan and drizzle with oil; sprinkle with thyme and lemon herb seasoning. Bake until chicken is cooked through, abou 30-40 minutes. Yield 1 chicken breast half per serving.
