Garlic Spiced Lentils - Masala Dal

Ingredients
1 tbsp Vegetable oil 1 cup Dried red or yellow lentils 1/2 cupOnion, chopped 1/2 Canned chopped tomatoes 2 tbsp Curry Paste1 tbsp Tikka Masala Curry Paste1/2 tsp Cumin seeds 1/2 tsp Fresh ginger, minced1 tsp Fresh garlic, chopped 1 cup Water1 tsp Fresh coriander leaves, chopped
Directions
Heat the oil in a pan. Add the cumin seeds and fry until they start to crackle.

Add the chopped ginger and garlic and saute for 1 minute.

Add the onion and saute for a further 3 - 4 minutes until light golden brown.

Add the remaining ingredients, mix well and transfer to your Slow Cooker. Cook on High for 1 1/2 to 2 hours.

Garnish with fresh, chopped coriander leaves.
