Tilapia with Spinach pesto stuffing

Ingredients
Tilapia Filets2 cups frozen spinachstore bought Pesto sauce (or make your own: basil, olive oil, garlic, parmesan cheese, pine nuts)Pine Nutssundried tomatoes
Directions
Season Tilapia and place in a pam sprayed casserole dish.
cook spinach in microwave. Mix spinach, chopped sun dried tomato & pesto sauce in a bowl. Place a spoon of stuffing mixture over half of each filet. Fold filet in half over stuffing. Top with additional stuffing and pine nuts.
Bake until fish is done about 30 minutes.

    For three fillets I used 1/4 cup of pesto. I chopped up raw tomatoes since I had that on hand. Very good. - 5/21/08
