Omelette, Spinach and 2 egg

Ingredients
olive oil cooking spray2 eggs1-3 cups fresh spinach 2 tbsp feta cheese
Directions
Makes 1 serving

Spray a pan with olive oil cooking spray and heat up. Beat 2 eggs and pour into pan. Flip the eggs over when about halfway done. When finished, put eggs on a plate and sprinkle 2 tablespoons of feta cheese on top. Put 2 cups of spinach into the hot pan and spray with olive oil cooking spray again. Saute' until the spinach is wilted. Place the spinach on top of the eggs, fold over and ENJOY!

Of course, I usually use more spinach and sometimes olive oil instead of spray.
