Asian-style Carrot Raisin Salad

4 large carrots, shredded1/2 cup golden raisins2 tsp ginger root, grated1/4 cup sesame oil1/2 cup cider vinegar (rice vinegar also works)4 tsp Splenda, or more to taste1/2 tbs sesame seedssalt and pepper to taste
Shred carrots or use prepackaged grated carrots.
Combine carrots, raisins, ginger root, and sesame seeds in bowl.
Whisk together vinegar, oil, and splenda. Pour over carrot mix and stir together.
Season to taste with salt and pepper.
