Buffalo Chicken Salad

12 oz of boneless skinless chicken breast2 cups of Frank's Buffalo Wing Sauce (0 calorie kind)4 tpsp Kraft Free Blue Cheese16 cups of Romain Lettuce (Big bag of Fresh Express)6 oz Grape Tomato's (approximately 36 tomato's)1/2 cup crumbled blue cheese
This recipe will yield 4 servings.
Place chicen breast into a baking pan and poor 1 cup of the buffalo sauce over the top. Bake according to the heating instructions on the bag. (most chicken is baked 20 - 30 minutes at 375 degrees until the internal temperature of the chicken reaches 170 degrees, juices from the chicken will run clear when it is done cooking)
About 10 minutes before the chicken is done cooking you can start preparing the rest of your meal.
Per serving measure out 4 cups of romain lettuce, 6 grape tomato's (1.5 oz), and 1/8th of a cup of crumbled blue cheese.
Mix together 4 tbsp's of blue cheese dressing and 1cup of buffalo sauce in a separate bowl. Makes 4 servings
Once the chicken is done baking, measure out 3oz of chicken per serving, cut it up into bite size pieces, place on top of the salad. Poor the dressing and sauce mixture over the top, mix and enjoy this mouth watering delight!
If you are looking to add any extra MUFA's (Monounsaturated Fattie Acids) into your diet a 1/4 of an avacado per serving is a great addition to this yummy salad.
