Low Carbed-Hickory Smoked Tuna Quesadilla

1 5oz.. pouch of Hickory 'smoked ' Stakist Tuna1 can, star kist Light tuna in water,drained!1 c. shredded Colby Jack cheese blend2 T. shallots1-1/2 ox. of non-fat or low-fat Cream Cheese, softened1/8 c. roasted red peepper strips, chopped4 8" Mission Low Carb Tortillas
Mix tuna, cream cheese, shredded cheese, peppers & shallots untill well blended.
Spread mixture on 'half' tortillas shells just to the edges. Fold into, similar to an omelette, brush with olive oil, place on a cookie sheet in 350* oven for 15 min. When middles are 'gooey', place on top rach to toast till golden brown. Serve immediately.
