Cauliflower soup

Ingredients
1/2 a medium head of cauliflower, broken into florets.8 fl oz boiling water1 medium onion, chopped finely30z potato chopped small,8 fl oz non fat milk4 tsp plain floursalt and pepper to taste, pinch of nutmeg2 z grated cheddar cheese1 tablespoon chopped parsley.1) Cook the cauilflower in the boiling water until nearly done, still crisp, Drain and reserve the water and cauliflower.2) Place onion and potato in a pan, cover with reserved water and cook for 6 - 7 minutes until potato is firm but cooked.3) In a small bowl blend the milk and flour. Pour the flour and milk mixture into the potato micture, stirring all the time. Season with salt, pepper and nutmeg.4) Bring to the boil, stirring continuously, reduce the heat and simmer gently for 5 - 10 mins until the liquid is smooth and thick.5) Stir in the cauliflower and cheese and cook until the cauliflower is heated and the cheese melted.Ladle into warm bowls and serve with a sprinkle of parsley.
