Sweet Potato Casserole

Ingredients
3 cups sweet potatoes, cooked and mashed1 cup of sugar (You can use Splenda; nutrional facts will probably change)2 eggs1/2 cup Fat Free Evaporated Milk1 tsp Vanillapinch of salt1/3 cup butter (I used Olivio Margarine with Olive Oil)For the Topping:1/3 Cup Whole Wheat Flour1 Cup Brown Sugar1 Cup Flaked Coconut1 Cup Pecans Chopped1/3 Cup Butter (I used Olivio again)
Directions
Combine all above ingredients until smooth. Pour into 2 quart casserole dish. Mix all topping ingredients and spread over sweet potatoe mixture.

Bake at 350 degrees for 35 to 40 minutes.

Makes roughly 12 servings 1 cup (or a little less) servings.
