Healthy Low Fat Oatmeal Blueberry Muffins

Ingredients

1 cup quick oats1 cup milk 3/4 cup + 2 tbls applesauce1/2 cup brown sugar1 egg2 tbsp oil1 tsp vanilla1/2 cup all purpose flour1/2 cup whole wheat flour2 tsp baking powder3/4 tsp cinnamon1/4 tsp nutmeg
Makes 12 muffins
Toast oatmeal in dry frying pan till brown
Transfer oatmeal to a large bowl, add milk, let sit for 30 min
Add applesauce, brown sugar, egg, oil, and vanilla to oats, stir till combined
Add dry ingredients* and stir till JUST combined
Fold in blueberries
Spoon into muffin tin
Bake at 350 for 27-35 minutes
Cool for 10 minutes before transferring to wire rack
* original recipe also called for 1/2 tsp salt, which I forgot to add, and mine came out delicious regardless
