Marys yummy enchiladas

Ingredients
3/4 c. potato w/garlic soup1/2 c. prepared mashed potatoes1 Tbsp. fresh chives1/2 c. onions1/2c. red peppers1/2 c. salsa1/2 c. four cheese mexican cheese shreds1 can enchilada sauce11 corn tortillas11 Black olives1/2 c. four cheese mexican cheese shreds
Directions
mix together the first seven ingredients. Place 2 heaping tbsps. of chicken mixture in one tortilla. Roll tortilla into a tube shape. Repeat with remaining tortillas and chicken mixture. Top with enchilada sauce. Spinkle with remaining 1/2 c. shredded cheese. Slice black olives and sprinkle over the dish. Bake in an 8x12 glass baking dish for 15 minutes covered with foil. After 15 minutes remove foil and bake for an additional 25 minutes. Makes 11 servings; one enchilada per serving
