Huevos Rancheros a la Bramble

Ingredients
Needs:- 2 large eggs- 1/8 cup onion- 1/8 clove garlic- 8 cherry tomatoes- 1 TBSP cilantro
Directions
- Preheat skillet
- Finely dice/chop all ingredients except eggs and mix (set 2-3 cilantro leaves aside for garnish)
- Crack eggs into skillet and add ingrediates over eggs
- Cover with clear lid and cook over low/medium heat until yolks begin to whitten.
- Serve
- Serves 1 person
