1 pound Harvest Soup Mix8 cups water2 cups chopped carrots2 cups chopped celery 2 cups shredded cabbage1 cup chopped onion 1 lb bulk Italian sausage3-4 cloves minced garlic
I figured this for 10 servings of about two cups or 400 grams each.
Combine soup mix and water. Bring to boil, reduce to simmer. Simmer one hour. You might want to add your garlic here and maybe a bay leaf.
Brown ground turkey. This would be a good time to season the meat. For an Italian sausage flavor, use paprika, ground fennel seed, a little salt, pepper, and some crushed red pepper if you like it spicy. For a bratwurst flavor, try marjoram, caraway seed, and nutmeg. (Or just get some Penzeys spice blends, which can, unfortunately, be a little heavy on the salt.)
You can also saute/sweat your onions, celery and carrots while the lentil mix is simmering. Or you can just drop them into the mix after the first hour. Add the veggies and turkey and simmer another hour.
You could also use chicken or ground beef instead of turkey, which would change the calorie counts a bit. This is a flexible soup, so be creative.
