Mexican rice

Ingredients
Ingredients:*Brown Rice, long grain, 2 cup Canned Tomatoes, 1 canPeas, frozen, 1.5 cup Yellow Sweet Corn, Frozen, 1.5 cup kernelsOlive Oil, 1 tbspOnions, raw, 1 cup, chopped Garlic, 2 clove
Directions
Saute onion and garlic in olive oil until sweated. Add rice and cook over medium heat until rice begins to toast, approximately 5 minutes. add canned tomatoes and cook another 2 minutes. Add 4 cups water and simmer, covered, for 40 minutes. Add frozen vegetables and cover again, simmering for another 5 minutes. Turn off heat and let sit for 15 minutes. Salt and pepper to taste.

Added tsp of cumin and pinch of chipotle powder.
