Ellen's Tuna Noodle Spinach Casserol

16 oz elbow casserole noodles2 5-oz cans of albacore tuna in water1 medium onion2 cloves garlic1/2 tsp oil2 tbsp butter2 tbsp flour1 cup skim milk1 10-oz package frozen chopped spinach, thawed6 oz grated cheddar cheese2 tbsp grated parmesan cheese
cook noodles
saute onion in oil until translucent. Add garlic and saute 30 seconds more. Set aside.
Defrost spinach and press out liquid, set aside.
Drain and Flake tuna, set aside.
In a medium saucepan, melt butter and then add flour. Slowly pour in milk and stir until thick. Add cheese and onion/garlic mixture and stir until cheese is melted. Add spinach and tuna and mix with drained elbow noodles.
Turn into a greased 9 x 12 casserole dish. Sprinkle on grated parmesan cheese.
Bake, covered, at 350 for about 30 minutes.
