Quinoa with Pea Pods and Peppers

Ingredients
1 cup quinoa1 1⁄2 cups vegetable stock or water2 tsp olive oil4 small shallots, chopped (1/4 cup)3 cloves garlic, chopped6 ounces snow peas, sliced (about2 cups)1 yellow or orange bell pepper, cored,seeded, and chopped (about 1 cup)1 1⁄2 tbsp lemon juice1⁄4 cup parsley, chopped
Directions
1. Rinse the quinoa in a fine-mesh strainer under
cold water until the water runs clear. Place
the quinoa into a medium-size saucepan with
lid and add the stock. Bring to a boil, cover,
and reduce to a simmer. Cook until the quinoa
is tender, 15 to 18 minutes.
2. While the quinoa is simmering, heat a sauté
pan over moderate heat. Once hot, add the oil.
When the oil is hot, add the shallots and garlic
to the pan. Sauté until the shallots become
tender, 3 to 4 minutes. Add the snow peas and
peppers and sauté for 3 minutes more.
3. Drain any remaining stock from the quinoa;
add the quinoa to the vegetables and stir to
combine. Remove from heat and add the lemon
juice and parsley. Serve warm or cold.

    I mistakenly got Snap Pea Stir Fry which was really just stir fry veggies with a few snow peas. While very colorful, my mistake really disappointed me. Next time I will be more alert as to what I buy. That being said, the addition of soy sauce would have been nice.

    I introduced my husband to quinoa yesterday with another recipe I tried from the recipe collection. Since I added no salt, his only comment was 'it could use some salt and what is wrong with plain old rice. I plan to try this recipe as he really likes pea pods but add low sodium soy sauce to his. - 6/5/12

    Very bland. I added some salt,pepper and curry. The curry gave it a little kick but it still needs something else - maybe soy sauce as someone else suggested. - 12/10/15
