1 Rotisserie Chicken (Whole)1 Can 98% Fat Free Cream of Chicken Soup2 Cups Mexican Cheese Blend1 Tablespoon Chopped Jalapenos8 Whole Wheat Tortillas
Remove skin, fat & bones from the rotisserie chicken. Chop chicken into small pieces. Mix with soup, 1 cup of the cheese and jalapenos. Place 1/8 of the mix on a tortilla and roll up. Repeat with the rest of the mix and tortillas. Place in a baking dish. Cover with the remainder of the cheese. Bake at 400 degrees for 30 minutes. Yields 8 whole enchilladas, 16 servings.
