Fruity Oatmeal Cookies

Ingredients
1/2 C unsalted butter2/3 C honey1 egg1 C whole wheat pastry flour1 t cinnamon1/2 t baking soda2 C rolled oats (or quick oats)1 C raisins1 C date pieces 1 C chopped pecans1 C coconut (unsweetened, if possible)
Directions
1. In a large bowl, mix wet ingredients
2. In another bowl, combine flour, cinn. and soda.
3. Add flour mixture to wet ingredients, stirring well.
4. Add in oats, raisins, dates, nuts and coconut. Mix well.
5. Place golf ball size cookies onto ungreased baking sheet.
6. Flatten slightly with the palm of your hand.
7. Bake at 350 for about 10-12 minutes.
8. Let cool before removing from baking sheet.
