Black Bean, Bok Choy, Miso Soup

2 cups Bok Choy1 and 1/2 cups Green Cabbage2 stalks Celery2 cups Black Beans3 cups Leeks1 cup Carrots1 small onion2 cups Organic Vegetable Broth6 cups waterMiso to taste
Cut and chop up all of your vegetables and combine everything except the Miso in your slow cooker with the water and vegetable broth. Turn on low and cook for about an hour or until your desired tenderness.
Add about 1 TBSP of Miso to every 1 cup of soup or more or less to taste. I will be keeping this soup in my fridge and eating through out the week so I will be adding the Miso each time I eat it (not all at once).
You can also add some noodles to this soup or vary the types of vegetables you use.
Will make about 20 1 cup servings
