Carrot Parsnip Soup - Sweet Epiphany

Ingredients
1 1/2 c. Carrots - chopped1/2 c. Parsnip - chopped1 c. Onion - chopped1 large Potato - chopped3 cloves Garlic1 Tbsp Oil4 c. Vegetable Broth4 c. WaterSeasoning to taste
Directions
Makes 8 - 2 cup servings.

Caramelize onions in oil. Add other veggies and sauté. Add water and broth. Let simmer for 20-30 min or until veggies are tender. Season. Blend 1/2 to all of soup depending on how creamy/chunky you'd like it.
