Okonomiyaki

Ingredients
Flour - 2.5 cupsWater - 8 ozEggs - 2 largeCabbage - 4 leavesAdditional Ingredient Ideas (not included in calories):Leek or Green OnionGround MeatShrimpTunaMushroomAnything you like...Japanese favorites:Aonori- green dried seaweedKatsuobushi- Driedn shaved benitoSquidOctopus
Directions
1. Cut the Cabbage leaves into thin strings. Leave out the hard, white core.

2. Mix the water, flour, eggs, and the cabbage strings together in large bowl.

3. Now add the extra ingreditants. Use whatever suits your taste. (Don't forget to keep an eye on the nutrition though!)

4. Fry the dough like a pancake in a small frying pan.

5. Before turning the okonomiyaki over, and while the dough is still quite soft, you may put other ingredients on top of the dough.

6. Turn the okonomiyaki.

7. When fried well, serve the okonomiyaki. May be served wiht mayonnaise or okonomiyaki sauce.

    Very tasty and very substatial--also a great way to get kids to eat leafy greens. I would halve the recipe, though, and eat it with a green salad. I added broccoli and onions to one half and shrimp to the other and it could have fed six with ease. - 11/21/08
