Peas in Cheese Sauce

4 1/2 tsp butter4 1/2 tsp all purpose flour 1/4 tsp salt1/8 tsp pepper 1 1/2 cups skim milk3/4 cup 2% milk Velveeta processed cheese block 20 ounces frozen peas thawed ( about 2.5 cups)
In a large saucepan, melt butter over low heat. Stir in the salt, pepper and flour until smooth, Gradually add in the milk. Bring to a boil and cook 2 or 3 minutes until this thickens up. Add the cheese, stir until melted. Add in the peas and cook several more minutes until heated through.
Makes 8 2/3 cup servings.
