Red Lentil Soup

Ingredients
2 T. olive oil16 oz. can crushed tomatoes1 med. onion chopped2 cloves garlic, minced1/2 t. cumin1/4 t. coriander5-6 cups beef broth1 T. lemon juice2 c. red lentilssaltpepper
Directions
Serves 6.

Combine all ingredients in a large pot and bring to a boil. Reduce heat to low, and simmer for 40-50 minutes, adding more broth if needed. Serve with plain yogurt, if desired.
