Spinach Sun Dried Tomato Frittata

3 whole eggs5 egg whites1/2 cup onions1 cup spinach 1/2 cup chopped sundried tomatossalt and pepper to taste
Saute onions in pan sprayed with cooking spray until softened. Add spinach, cook until wilted. Put in bottom of pan sprayed with cooking spray (bead loaf pan works), sprinkle with sundried tomatoes. Whisk eggs and whites together; pour into pan. Add salt and pepper. Bake 20-20 minutes at 425. Remove from oven, sprinkle with cheese. Good hot or cold. Serves 4.
