Cheesy Chicken-Broccoli Casserole

1 lb. Chicken breast meat, cut into chunks1 medium head of broccoli, chopped1 cup vegetable broth1 cup low-fat shredded cheddar cheese1 medium onion, chopped1 large shallot, chopped1 T spelt flour1 oz. soy nuts, crushed
Spray an oven-safe skillet (like a cast iron dutch oven) with nonstick spray, and saute onions and shallots until lightly browned. Sprinkle with the spelt flour and stir to combine.
Add in broccoli, half the cheese, and uncooked chicken. Sprinkle remaining cheese and crushed soy nuts on top. Bake, covered, in a 350-degree oven for about 30 minutes. Remove the lid and cook an extra 10 minutes or so until the top is golden brown.
Makes six large servings.
