Ingredients
1-1/2cups vital wheat gluten1/4 cup nutritional yeast1 teaspoon salt2 teaspoons paprika1/4 teaspoon ground cinnamon1/4 teaspoon ground cumin1-2 teaspoons ground black pepper1/4 teaspoon allspice2 teaspoons garlic powder4 tablespoons tomato paste1 tablespoon tamari soy sauce2 tablespoons olive oil2 tablespoons vegan Worcestershire sauce
Directions
Makes one large log that can be sliced and used as needed, approximately 8 servings.

Preheat oven to 325°.

In a large mixing bowl mix dry ingredients. Mix the rest of the ingredients (liquid ingredients) in a smaller mixing bowl. Whisk well until mixed.

Add the liquid ingredients to the dry ingredients. Mix well, then knead for a minute or two.. it doesn't need long.

Form into a log (6-8" long), wrap tightly in foil, twisting ends. Bake for 90 minutes. When done baking, unwrap and leave out to cool all the way. Then wrap it foil or plastic and refrigerate. Slice to use as desired.

    Great texture, not at all the chewy sponge I had expected from other recipes. A bit dry, although that was probably my fault - when I was doubling the ingredients, I added a bit too much gluten. A bit too spicy for children and people with sensitive taste buds. Great with a b. sugar/ketchup glaze. - 4/29/12

    This is a great recipe. It taste great and has a real meaty texture. Also you can vary the seasoning to taste like chicken, sausage etc. You can slice, chop it into pieces for a stew or ground up like ground beef. It is very easy to make! - 6/5/10
