Pumpkin Pudding

Ingredients
Pumpkin, canned, without salt, 2 cup (remove)Milk, canned, evaporated, 1 can (13 oz) (remove)Brown Sugar, .35 cup, packed (remove)Egg, fresh, 3 large (remove)Salt, .5 tsp (remove)Vanilla Extract, 1 tsp (remove)*Pumpkin Pie spice, 1 tbsp (remove)*Cool Whip whipped topping, 16 tbsp (remove)
Directions
Beat all except cool whip together until smooth. Pour into greased/sprayed pie pan. Bake for 40-50 minutes until center is set. Garnish with cool whip. Great warm or cold.

    I like the WW version better...fewer ingredients and calories...same Coolwhip and pumpkin, add allspice to taste, and packet of sugar-free, instant vanilla pudding. Dip grahmn crackers in it = ooh la la and fills you up fast!! - 7/14/07
