COUS COUS PREP:1/3 Cup (dry)-Near East Whole Grain Wheat Couscous Original Plain, Yields 1 cup cooked. (Calories noted are for prepared per directions) Morton Light Salt-dash in waterPam, Cooking Spray - Olive Oil (1 sec), 2 sprays in waterSALAD PREP:Parsley, FRESH- .50 cup, washed, chopped wellCucumber (peeled), .25 cup, pared, choppedRoma Tomato- .50 tomato-choppedOnions, raw, 1 tbsp chopped Lemons, .50 fruit-squeezed Salt-free Mrs. Dash Seasoning Blend Table Blend, 0.25 tspPam, Cooking Spray - Olive Oil (1 sec), 2 serving Morton Light Salt-0.25 tsp
Boil 1/3 cup water, pinch of lite salt, and 2 sprays of olive oil cooking spray, add in 1/3 cup cous cous.
Stir, cover, remove from heat and cook for 5 minutes, fluff with fork. Makes 1 cup cooked cous cous.
Refrigerate and cool completely. When cool, add fresh chopped parsley, cucumber, tomatoe,onion, juice of half a lemon, Mrs. Dash, lite salt, and 3 sprays of olive oil. Toss and serve or re-refrigerate to allow flavors to blend.
Makes Four 1/2 cup servings with all ingredients.
