Chicken Parmesan and Penne Pasta

Ingredients
14-1/2 oz can of stewed tomatoes, no salt added 2 tbsp organic tomato paste3 skinless, boneless chicken breasts cut into halves 16 oz. healthy low carb pastaItalian seasonings1 tbsp olive oil1/4 cup of onionsCooking spray4 oz. part-skim mozzarella cheese
Directions
Cook penne pasta according to package directions.
Cut the chicken in half, season if you wish, spray the saute' pan with cooking spray.
Cook the chicken on medium heat until lightly brown on both sides.
Take the chicken out.
Add olive oil to pan and brown the onions slightly.
Place stewed tomatoes, tomato paste, Italian seasonings and any other seasonings you wish into pan; cook until bubbling.
Once it's bubbling place chicken back in the pan.
Place cheese on top of the chicken and put cover on to allow cheese to melt.
