Ingredients
3 Tbsp canola oil3 lbs pork loin, cubed2 C onion, chopped1 1/2 tsp minced garlic4 cans hominy, drained4 - 5 C water2 (4oz) cans chopped green chiles, undrained1 can (10 oz) red enchilada sauce1 can diced tomatoes and green chiles1/2 C taco sauce1 bay leaf1 tsp salt1 tsp cumin1/2 tsp black pepper1/2 tsp oregano
Directions
Heat oil in large soup pot, add pork, onion and garlic; cook until pork is browned. Add all other ingredients; mix well. Simmer for 2 hours, stirring occasionally. After 2 hours, add remaining cup of water if needed. Adjust seasonings to taste and simmer 2 to 3 more hours. Serves 12.
