Egg & Cheese Quesadilla

Ingredients
2 Tortillas (flour - 8")1/2 cup egg substitute1/2 tesp. black pepper1/2 jalapeno pepper (diced)1 serving reduced fat colby-jack cheese1/4 cup onion (diced)1/2 cup tomato (diced)
Directions
Serving = (1) 8" Quesadilla

. Preheat oven to 375 degrees F
Scramble egg substitute with salt & pepper in skillet
sprayed with pam. I also sprinkled in some dry spices
(cumin-chili power & Mrs.Dash)
. Lay 1 tortilla on a nonstick baking sheet (or spray your
baking sheet with pam) Spoon cooked egg substitute on
top add jalapeno peppers, tomato, onion & cheese.
. Add second tortilla on top, press lightly & bake 5 min.,
flip & bake 5 more min. or until cheese is melted.
Cut into quarters or eighths....
