Moosewood Cookbook Banana Bread- with a couple changes

1 1/2 Cups Melted butter1 3/4 cups brown Sugar (in our case we used Jaggery)(Or 1 1/2 cups honey can be used)4 eggs, room temperaturegrated rind of 1 orange2 cups whole wheat flour2 cups white flour1 tsp salt1/2 tsp baking soda3 tsp baking powder1/2 tsp nutmeg 2 tsp ground cinnamon2 cups well mashed, ripe banana soaked in 1 cup strong, black coffee (we used Torani sugar free coffee syrup
preheat oven 350
Beat in large bowl, beginning with jaggery, and butter- add eggs one at a time. Add remaining ingredients, and beat until light in color
sift the dry ingredients together twice
then add to the wet ingredients, alternating with the banana mixture, beginning and ending with flour.
DO NOT OVER MIX- it toughens and dries a cake
divide into 2 loaf cakes (or as in our case- use a 9x13 pan and make into a cake:D)
Bake 40-50 min's
